Romesco sauce- the new Hummus?

For those of you who struggle with digestive issues, you’ve probably heard about the FODMAP diet. It’s miserable, requiring you to cut out a huge number of food groups, such as; bananas, chickpeas, garlic and onions- you get the gist. Anyway being told to cut out hummus felt like an impossible task. Anyway I set about trying to come up with an alternative… behold the romesco. A Spanish sauce, which is regularly eaten with seafood. The base of it is almonds and red peppers. I have to say I was sceptical of the ingredients but decided to give it a whirl. Holy Moly it’s a game changer. Below is a basic recipe however feel free to shake it up if you don’t have the exact ingredients, I’ve swapped hazelnuts for buckwheat in the past (very crunchy!) and I don’t always put the breadcrumbs in if I don’t have any. Slather it over salads, with pasta or if it’s one of those days spoon it straight from the bowl.

 

Makes a small jars worth:

2x large jarred roasted red peppers

60g roasted almonds

50g roasted hazelnuts (deskinned)

2 tbsp of good quality extra virgin olive oil

Salt and pepper

2 tsp red wine vinegar

1 tsp paprika

100g fresh breadcrumbs or panko works well if you’ve got

 

Blend all ingredients in a blender, add more oil to reach you desired consistency; I like mine quite thick, but feel free to add more oil to loosen it up. A quick lunch calls for roasted veggies, romesco and feta.
