 Creamy cauliflower soup

This recipe is a game changer for any soup lover. Vegan, gluten free and dairy free. 6 ingredients gives you the creamiest, most indulgent soup you won't believe it has no milk or cream.

To make enough for 2 people you will need:

1 large head cauliflower

2 leeks

1 bulb garlic

bunch of chives

1/2 tbsp bouillon/1 veggie stock cube

olive oil

Method:

Roughly chop the leeks and garlic and sauté in a bit of oil. Chop the cauliflower into florets and add to the pan. Add in 500ml of water with the stock cube/bouillon powder. Let it simmer for about 15 minutes or until the cauliflower is tender and almost falling apart. 

Blitz up and return to saucepan.

Season with salt and pepper and top with chives and olive oil.
